"On most days, you'll find a very generous soul sitting behind the bar at La Capilla. And given that Don Javier Delgado Corona, the owner/bartender of this earthy joint, has spent 82 years and counting on this planet, nobody questions his right to a little comfort while he prepares his signature drink, the Batanga.

Made with tequila, fresh lime juice and Coke, this concoction is kin to the Cuba Libre, but the tequila adds extra spice and salting the rim of the glass gives it extra dimension. Woe betide the customer who tries to pick up the glass before Corona gives the drink a quick stir with a long knife, though. It's all part of the ritual."
