The Blue Hawaii, not to be confused with the Blue Hawaiian, was invented by bartender Harry Yee at the Hilton Hawaiian Village Resort & Spa in the 1950s.
Recipes
Original Harry Yee recipe
In a 12-ounce glass, put ice, then add in this order:
- 3 oz. Pineapple juice
- 1 oz. Sweet & sour mix
- 1/2 oz. Blue Curacao
- 3/4 oz. Vodka
- 3/4 oz. Light rum
Stir gently, garnish with pineapple slice and vanda orchid.

- 2 oz Pineapple juice
- 3/4 oz Fresh lemon juice
- 1/4 oz Sugar syrup
- 3/4 oz Blue Curacao
- 1/2 tsp Cream or Half & Half
- 1 1/2 oz Vodka
Shake well with plenty of crushed ice. Pour unstrained into a tall glass.
Writes Berry: "The proportions of this 1980 knockoff make for a Blue Hawaii with more heft, while the dash of cream not only gives the drink a nice opalescent hue, but a "fuller" mouth-feel.
