Pg. 304 (HAVANA): "Hardly anyone knows how to mix a proper Bacardi cocktail, so I asked Senor Rafael Valiente, who is host at the famous bar, and he told me that you should take the juice of half a lime, half a teaspoon of granulated sugar, one and a half ounces of white Bacardi, mix thoroughly, and shake well with ice."

Question: Does Grenadine belong in a Bacardi Cocktail?

Where did the Grenadine Syrup, used in todays Bacardi Cocktail come from? Is it meant to be in the drink or not?

"The 1914 reference is a good one! But grenadine seems to have come and gone after then. The 1935 "cocktail column" in the Middletown NY paper cited the Bacardi cocktail as "one of the outstanding favorites" of the New York cocktail clubs, with the recipe calling for lemon, gum syrup, and Bacardi, shaken and strained, but no mention of grenadine.

A 1936 United Press story about the lawsuit over using actual Bacardi quotes bartenders saying they made it of lemon, grenadine, and "any rum." (The Bacardi lawyers then asked what meat they used in chicken sandwiches and in beef stew. During this line of inquiry, according to the account, the judge said "Ah." An injunction was soon handed down that a Bacardi cocktail was to be made with Bacardi rum.)

Bacardi trumpeted its success with ads that claimed that "Even the law says.... Nothing can replace Bacardi." The grenadine evidently was not as important. Bacardi ads in 1945 encouraged bar patrons to get unruly if served a non-Bacardi Bacardi cocktail ("It's your right to bawl out the umpire") and goes on: "Try one. It may be made dry without grenadine or sweet with grenadine.""

  • 1/2 pony grenadine syrup.
  • 2/3 jigger Bacardi rum.
  • Juice of half a lime.

Shake well. Strain. Serve.
