Peychaud's Bitters is a red, gentian-based bitters with a lighter, slightly sweeter taste compared to Angostura Bitters. It was created around 1830 by Antoine Amédée Peychaud, a Creole apothecary from Haiti who settled in New Orleans, Louisiana.

It's a necessary ingredient for the Sazerac and the Seelbach Cocktail.
